Caol Ila is a large distillery on the island of Islay. It is owned by Diageo and is an important component in the group's blends. In addition, it is also available as a worldwide single malt. The distillery produces very consistently high quality and popular light peated spirit. Caol Ila can also be found in many other whiskys, but not under her own name. A very desirable malt. Perhaps more than its iconic cousins from the island of Islay.
This single cask version is 12 years old and matured in a barely influential former bourbon cask. Pure, highly aromatic, rich, clean and versatile. And also powerful. A beautiful chic expression of how beautiful Caol Ila can be in age. This barrel is bottled entirely for High Spirits and therefore for the Netherlands. Because it is such a beautiful, powerful and rich Caol Ila of 12 years old.
Nose: Sweet and soft peat smoke, vanilla and crème brulee, sweet liquorice, light citrus influences. Even more fresh fruit notes with water
Flavour: Immediately subtly sweet, rich in subtle peat and (salty) minerals and liquorice. The peat smoke is firm but not dominant and elegantly and continuously envelops the subtle aromas. Sea salt, soft cream and brioche. With water even more elegant and aromatic.
Finish: Long. A combination of smoked fish and fresh pears. Very elegant and rich. Even richer and more pronounced with water.
