In 1959, William Fèvre harvested his first vintage from his domain. Originating from
a family that had been involved in wine growing in Chablis for 250 years was ahead of it
the reason that he started his own wine estate with 7 hectares. Now owned
Doma
Structured wine with a floral nose and intense mineral, slightly smoky aromas. The taste is full and round, but very elegant. Serve at 12 to 14°C with various fish dishes, shellfish, poultry and white meat, grilled or with creamy sauces.
Les Preuses is probably taken from the word “Perreuse” (stone), the name given to the ancient Roman road which ran below the current vineyard. Made for ageing thanks to a dense, compact, clay-rich soil resting on a limestone bed.
