Description
Dom Pérignon 2017 is a vintage of contrasts. In a difficult, wet harvest year, selection was extremely strict, resulting in a small but highly concentrated production. The blend (±61–62% Chardonnay, 38–39% Pinot Noir) is dominated by Chardonnay from Chouilly and other regions, while Pinot Noir – with a prominent role for Bouzy – adds structure and depth. On the nose, a complex mix of orange peel, dried apricot, brioche, and toasted hazelnut unfolds, with that characteristic reductive touch of flint. On the palate, the wine is creamy and layered, with ripe stone fruit, citrus bitters, and a fresh, briny tension. The mousse is velvety, the structure powerful yet refined. The finish is long, mineral, and slightly phenolic — a style reminiscent of the 2003 vintage upon release, but with impressive aging potential. Taste profile: brut, medium to full-bodied, creamy texture, fresh acidity, notes of apricot, citrus, brioche, hazelnut, and chalk.

Gastronomic Champagne
This is Champagne for the table. Perfect with lobster, scallops, turbot, or poultry with creamy sauce. Also wonderful with refined Asian dishes where tension and umami come together. Serve around 8–10°C in a large glass to allow the aromatic complexity to fully come into its own.

Extremely limited production
The 2017 vintage experienced frost, heat, and rain around the harvest. Only the best plots were selected. Production reportedly amounts to only a fraction of a normal year (approximately three months' market stock). Chef de Cave Vincent Chaperon chose to bottle the vintage anyway as a document of the year — a clear change of direction within the house. The wine ages for a long time on the lees and is released in limited volumes.
