Bimber Distillery was founded by whiskey enthusiasts, with a mission to produce a high-quality single malt whiskey with character, using traditional methods rarely seen today.
The journey begins at Bimber's own farm, where 100% of Bimber's barley is grown. It is then traditionally malted, hand mashed and slowly fermented for seven days in wooden washbacks made by hand in Bimber's own cooperage. We use direct fire to heat small copper pot stills and age the new make spirit in hand selected barrels. Finally, the whiskey is bottled on site in our distillery. The Bimber Distillery represents a handcrafted approach to whiskey production in which traditional methods, expertise and an absolute commitment to quality are passionately central.
