CLIMATE & TERROIR: Semi-continental climate. The vineyard
has a southeastern exposition. The soil consists mainly of
white limestone.
VINIFICATION: 50% of the chardonnay is fermented in barriques.
The wine then matures for 13-14 months, with 50% of the wine 5-6
rests on its yeast cells for months in French oak barrels. The
The remaining months it matures further in stainless steel.
GRAPES: chardonnay
ALCOHOL PERCENTAGE: 13.00%
SMELL & TASTE: The wine is soft, beautifully aromatic with aromas of
flowers and white fruits, such as pear and apple.
SERVING SUGGESTION: A seductive and elegant wine that tastes good
combines with fish, shellfish and crustaceans.
FACT: The name Vaillons comes from the Latin word 'vallis', meaning
means 'little valley'
