THE PROCESS
This Clonakilty single cask was created specifically for the Dutch market. The great success of the previous Single Cask, which was matured in Amarone casks, led us to embark on a similar project. Through our connections, we were able to purchase a cask from the port house Calem Porto. This renowned Port house asked us which cask we wanted, and we indicated that we wanted the very best cask. The Master Blender got to work, provided us with the best cask, and immediately shipped it to Ireland. Upon arrival in Ireland, we received a request from Clonakilty asking if this cask needed to be filled completely—a strange question, we thought—but it later turned out that this cask was a Port Pipe of no less than 625 liters. In short, a very large cask and therefore a lot of whiskey. A blessing in disguise, because the whiskey is truly delicious, and we expect high demand for this Single Pot Still Single Cask Whiskey from Clonakilty. The Port cask finish adds rich notes of red fruit, dark berries, soft spices, and subtle sweetness, while maturation in Clonakilty’s Atlantic Ocean warehouse provides a refined maritime influence and beautiful balance. The result is a smooth and complex Irish whiskey with layered notes of fruit, oak, and spices.
TASTE PROFILE
On the nose, notes of ripe red berries, soft vanilla, and subtle woody spices.
On the palate, dark fruits, Port sweetness, and warming spices unfold with richness and balance.
The finish reveals toasted oak, dried fruit, and lingering hints of cocoa.
