The Guillaume & Virginie Philip wine estate is run by Guillaume and his
wife Virginie Philip. In 2007, they produced their first wine, the now
coveted MIP rosé. The vineyards are located at the foot of Mount Sainte Victoire in the Provençal commune of Puyloubier. The soil surrounding the
estate consists of clay, loam, sand, and stones, an ideal composition for the
production of flavorful and aromatic rosé wines. The vineyards primarily plant Syrah, Grenache, Cinsault, and Rolle (Vermentino). Each plot
is vinified separately to allow for the perfect vinification method for each soil type. Due to the warm and dry climate, diseases are rare in the
vineyards, and the use of pesticides is therefore minimal. This environmentally friendly approach naturally has a positive effect
on the wines, which are fruit-rich, elegantly spicy, floral, and above all
deliciously pure.

CLIMATE & TERROIR: A Mediterranean climate with warm summers
and relatively mild winters. The soil is calcareous with sand, red clay
and stones.
WINIFICATION: Vinification takes place in a low-oxygen
environment in stainless steel tanks. After fermentation, the wine is aged
for another four months on the lees.
GRAPES: Vermentino
ALCOHOL PERCENTAGE: 13.00%
NOISE & TASTE: Expressive and aromatic with notes of citrus and
tropical fruit. The palate is full, fresh, and fruity with a beautiful
balance and a mineral finish.
SERVING SUGGESTION: Delicious as an aperitif and an ideal accompaniment
to young cheese, grilled fish, or shellfish such as grilled
shrimp and langoustines.
