Highland Park
Perhaps one of Scotland's most famous "island distilleries," and certainly one of the most remote, Highland Park is located on Orkney in the Shetland Islands. Founded in 1798, the distillery sources peat from its own moors and water from Cattie Maggie's Well, the same source it has used for over 200 years. Highland Park still operates its own floor malting, which provides approximately 20% of the barley it needs for whisky production, and has two wash stills and two spirit stills.
The spirit is powerful and complex, with a hint of charcoal and a dense, barley-rich, honeyed character. The 12-Year-Old and 18-Year-Old are considered classic malts by many whisky enthusiasts, while single vintage releases and special editions sell quickly to collectors. TASTING NOTES
The nose is complex and multi-layered. Notes include leather, caramel, marzipan, and a symphony of fruit. These fantastic flavors are supported by the soft smokiness so characteristic of Highland Park whisky.
The previously described lush notes of fruit and smokiness are also evident when you sip this exceptional Highland whisky. On the palate, these notes are supported by delicious spices like nutmeg and the warmth of oak. The finish is almost endless, feeling creamy on the palate and reminiscent of crème brûlée.
