A tiny, beautiful island off the west coast of Scotland is making whisky history: Since 2017, single malt whisky has been legally distilled on the Isle of Raasay, opposite Skye. The Isle of Raasay Distillery has since become the heart of the island community. Over ten percent of the approximately 160 inhabitants now lend a hand in whisky production. Their island is a constant source of inspiration, for example, for the new, limited-edition Sherry Quarter Cask Release, Dùn Cana.
This single malt is a tribute to its Hebridean home and the iconic peak of Dùn Caan (Gaelic: Dùn Cana), the highest hill on the Isle of Raasay. True to the distillery's style, it blends peated and unpeated whisky. After initial maturation in Kentucky rye casks, this whisky was married and then finished for nine months in small quarter casks (125 liters) that previously held Pedro Ximénez and Oloroso sherry from Bodega Miguel Martin.
At 52% ABV, Dùn Cana exudes peppery spice, dried sultanas, roasted nuts, and a hint of vanilla, before finishing with salted chocolate and notes of aromatic wood smoke.
With Dùn Cana, the distillery launches a bottling series that will be expanded annually with a new release. Each edition will differ slightly in cask composition or age.
