Joan Sardà is a small winery in Castellví de la Marca, a town in the
Alt Penedès region near Barcelona. Masia Olivella is the name of the family estate
where wine has been produced since the seventeenth century. The Sardà family's wine history dates back to 1927 when grape grower Tomàs Sardà Comellas
started making wine himself. After a successful harvest, he decided to
sell the surplus wine in nearby Barcelona. Thanks to Tomàs's business acumen,
the foundation for the family business was laid, and subsequent generations
continued its tradition. Today, Joan Sardà is one of the most
respected wineries in the region. The winery specializes
in Cava, of course, but also in still wines made from Xarel-lo, Chardonnay, and
Cabernet Sauvignon.
CLIMATE & TERROIR: The Joan Sardà vineyards in the Central Penedès region have deep, calcareous clay soils. They enjoy a Mediterranean climate with abundant sunshine and influences from the Mediterranean Sea.
WINIFICATION: This cava is made using the traditional method. After a gentle pressing and 21-day fermentation at a low temperature, which preserves fruity aromas, structure, and freshness, the wine is aged in the bottle for 20 months.

NOIS & TASTE: The Joan Sardà Cava Rosat Brut is a fresh and fruity cava with a light pink color and a delicate mousse. The wine has subtle flavors of ripe red apple and strawberry. Beautiful aromatic complexity is achieved through the long bottle aging. SERVING SUGGESTION: A versatile cava, ideal as an aperitif or
as an accompaniment to tapas, antipasti, or cold fish dishes.
TIP: This cava is one of the few rosé cavas made entirely
from the Garnacha grape.
