Kirei 80 is a relatively dry sake made from 20% polished rice. The rice is Shin-Senbon, an unusual indigenous rice variety from Hiroshima. The result is a sake with a rich rice flavor, which intensifies with age. Kirei 80 has mineral and spicy notes, alongside hints of licorice, pear, and brown sugar. It is sultry and sweet with a plump milky note and a distinct hint of anise. It is unpasteurized and undiluted. This brewery's sake is known for its excellent balance of umami and acidity. Kirei 80 is a wonderful accompaniment and versatile accompaniment to many dishes.
The Kirei Shuzo brewery is located in the village of Saijo, on a street known as "Sake Brewing Street" due to its high concentration of sake breweries, a result of the high quality of Saijo's pure spring water. Brewing traditions date back to around 1650. The village is situated in a high valley surrounded by mountains ranging from 300 to 500 meters high, creating an ideal winter climate for sake brewing (4-5 degrees Celsius). The brewery has its own water source. The brewery produces only junmai sake: pure sake.
