Three years after Machir Bay's first cask strength bottling, this new edition is now available. For lovers of peated whisky, this can only be festive news. The whisky is heavily peated and less than ten years old. This creates a distinctive and characterful dram that explodes on the palate. Powerful peat smoke, fresh citrus fruit, warming spices, and refined sweetness all present themselves exuberantly yet balanced. The whisky has a cask strength of 58.1% ABV. It is non-chill-filtered and retains its natural color.

Kilchoman Distillery, founded in 2005, is Islay's newest, smallest, and most westerly distillery. Kilchoman (pronounced kil-'ho-man) is a farm distillery and the first to be built on the island of Islay in 124 years. Kilchoman offers everyone the opportunity to experience everything related to malt whisky distillation; From barley to bottle, according to the best grassroots traditions. Anthony Wills built his distillery in the vacant buildings of Rockside Farm, a working farm on the remote west coast of Islay. His goal was to use as many local ingredients as possible to create a truly authentic Islay whisky. Kilchoman is one of the few distilleries that practices its own traditional floor malting. After considerable opposition and setbacks, the first spirit was released from the very small stills at the end of 2005. On September 9, 2006, the very first official bottling of Kilchoman was presented on Islay. This New Spirit was judged by connoisseurs to be very promising and an excellent basis for a fantastic Islay Malt. As befits a true Islay whisky, extensive peat is used in the drying of the barley. With 50 ppm of peat, Kilchoman became one of the most heavily peated whiskies. The distillery's own spring water is used to reduce the whisky to 46% alcohol. This water comes from Octofad Farm, located on the Rhinns of Islay.
Tasting Notes
Color: Gold. Nose: Aromas of lemon zest, melon, peat smoke, sweet vanilla, honey, and floral notes. Palate: Notes of rich chocolate, fresh citrus fruit, peat smoke, hints of smoked meat, and a lingering caramel sweetness. The finish is long with plenty of development and a beautiful balance of peat smoke, spices, and roasted and candied fruit.
