The production of top quality raki begins with the arrival of raisins and anise in production. First the raisins are processed into must. Then the must is poured into the tanks and, after being pasteurized by fermentation and distillation, processed into suma at 93 degrees Celsius. The second distillation begins when the suma, water and anise are added to the copper still. The lead in the distillation process contains aldehyde, which is evaporated at a lower temperature than ethyl alcohol, ether, methyl alcohol and similar elements. These are separated because they do not serve a good taste or the high quality of the product. Finally, the high alcohol content such as amyl alcohol is removed and the final product raki is created.
