A special limited edition of Nc'nean whisky, released every autumn, is dedicated to the employees of the Nc'nean distillery, who refer to themselves internally as "rebels". This year, distiller Simon Hewitt takes centre stage. Trained as a chef, Simon found his way to Nc'nean as a distiller in the Highlands via North America and New Zealand. It is therefore not surprising that this Rebels bottling was matured in STR red wine casks and then finished in Innis & Gunn Oatmeal Stout beer casks. Buttery and slightly chocolaty with accents of cherry jam, this Single Malt is a versatile spirit with 48.5% vol. Ecological principles are a central part of Nc'Nean's philosophy. Founded in 2013 by Annabel Thomas, the distillery on the west coast of Scotland produces sustainably, experimentally and largely independently of conventional traditions. After four years of development, distillation began in 2017 and the first whisky was released in 2020. Nc'nean is B Corp certified, works with 100% organic Scottish barley, runs the distillery on renewable energy and bottles its creations in 100% recycled glass bottles. Since 2021, it has been the first UK whisky distillery with certified net zero emissions. Nc'nean - known for experimentation - utilises innovative yeasts and fermentation processes and follows the ethos of its namesake Neachneohain - a Gaelic goddess of nature who stands for independence and the protection of the environment.
