Salon is a unique champagne. Defined by its particularity since the very beginning, this exceptional wine is the champagne of a single terroir: the Côte des Blancs ; a single cru: Le Mesnil-sur-Oger; a single grape variety: Chardonnay; a single year: that of a great vintage; and of one man: Eugène-Aimé Salon.

Aimé Eugène Salon's intention was to create a mythical wine from the start: one vintage, one plot, one cru and one grape from one village, namely Mesnil-sur-Oger.

The grapes for the champagne come from 'Le jardin de Salon', a vineyard of one hectare and from nineteen other plots in Mesnil-sur-Oger, all carefully selected by Eugène Aimé Salon himself. He keeps his wines on slats in the cellar for at least ten years.

In 1911 he produces his first millésimé of the 1905 vintage. The champagne is only intended for friends and the restaurant Maxim's in Paris.

When Aimé Salon dies in 1943, he is succeeded by his great-nephew. The house retains a family character until 1963.

In 1988, the Laurent-Perrier group took over the Salon house and its neighboring Chardonnay specialist, the Delamotte house. Today, this group is led by Didier Depond and Michel Fauconnet, chef de cave and production director of Laurent-Perrier.

Only 37 millésimés were made in the 20th century, which is very unusual. Seven millésimés have been made in the 21st century, namely 2002, 2004, 2006, 2007, the already legendary 2008, 2012 and the most recent 2013.
