This kimoto-brewed unpasteurized sake is made with Yamada Nishiki rice from Sakura City, Tochigi Prefecture. This "Modern Ichishiki" is the pasteurized version of four varieties being released sequentially using the same brewing method. (Zero-shiki = unpasteurized sake, Ichishiki = pasteurized sake, Nishiki = origarami (sake-related), Sanshiki = sparkling unpasteurized sake)
