CLIMATE & TERROIR: Maritime climate with relatively dry, warm summers
and mild winters. The red-colored soil is rich in clay and
minerals.
VINIFICATION: Only the pure juice (cuvée) is fermented at low
temperature in stainless steel tanks. A portion of the Chardonnay
ferments in used French oak barrels. The second fermentation
lasts at least 20 months before disgorgement takes place.
GRAPS: Chardonnay (51%), Pinot Noir (47%), Pinot Meunier (2%)
ALCOHOL PERCENTAGE: 12.00%
AROMA & TASTE: Elegant, fresh, and floral with aromas of white
peach, fresh apple, and pear. The taste is lively and soft with
stone fruit, citrus, raspberry, refined acidity, and a long, dry
finish. SERVING SUGGESTION: Serve as an aperitif, or right after a
substantial meal, with light lunch dishes, (stuffed) salads,
sushi, fresh oysters, pâté or scrambled eggs. Also delicious with
almond cake and even with roasted duck.
FUN FACT: Frans Malan was the first South African producer to
introduce a Kaapse Vonkel in 1971, the South African answer
to champagne.
