Pure sake as it was made centuries ago, true "liquid rice." All ingredients and elements are premodern: natural rice, natural yeast, home-grown kōji, slow-brew kimoto, unfiltered. The "80" in the name refers to the polishing percentage, indicating that the rice was also polished in a premodern way, at only 20%.

The Terada Honke Brewery was founded around 1675 and recently returned to a very traditional brewing method. It is the most radical brewery in Japan: all modern machinery has been abolished, and natural, organic, and handmade are the new keywords.
Terada Honke is therefore one of the few breweries that does not use cultivated yeast, but relies exclusively on the natural yeast culture of their brewery. The entire production is fermented according to the slow-brew kimoto method, in which no lactic acid is added to the starter (moto).
