The Macallan distillery was one of the first whisky distilleries in Scotland; it was founded in 1824 near a ford in the River Spey, close to the Easter Elchies farm. The Macallan distillery sits high above the northern bank of the River Spey, north of Aberlour, under the watchful eye of Easter Elchies House. This 18th-century manor dates back to the era of King James II. A completely new distillery was built next to the old one in 1966, and Scotland's largest warehouse opened in 1990. The whisky currently being bottled has largely been matured in ex-sherry or ex-bourbon casks—specifically, the finest casks available. The distillery, which remains in operation today, houses five wash stills and ten spirit stills heated by gas flames. These stills are notably small and feature short necks; indeed, they are the smallest gas-fired stills in Scotland. The water used for production is drawn from four boreholes; it originates from the River Spey and has filtered down through various layers of soil, resulting in a constant water temperature.

Tasting Note
Colour: Dark gold. Nose: Aromas of fresh coconut, lime, lemon, orange, mango, papaya, vanilla, almonds, sweet oak, nutmeg, and cinnamon. Palate: Notes of sweet lime, lemon, vanilla cake, dried coconut, powdered sugar, coconut milk, sweet oak, and dried tropical fruit. The long finish offers notes of coconut and floral honey.
